Bob’s Besto Pesto!!!

1 cup Extra Virgin Olive Oil
1 cup Grated Parmesan
3/4 cup Nuts (Pine Nuts, Walnuts, or some combination, 1/2 cup Pine Nuts and 1/4 cup Walnuts is awesome)
7 cloves garlic
3 tsp sea salt
1/2 tsp red pepper flakes
2 cups blanched Kale

Put all the ingredients in a blender and blend in short pulses, mixing with a spatula. Blend until the Kale is chopped into small pieces, but not puree. Keep mixing to make sure the nuts and garlic are blended well

I had a lot of Kale last summer, turns out I couldn’t give it all away, not even close. I blanched and froze as much as I could and started looking for things to do with it. This pesto mix is awesome by itself, on pasta, bread, etc… The strong Kale taste is dampened by all the garlic, oil, and salt. I started with a basic pesto and modified it to work better with the Kale.
